13 Days of BlogOween: Day 10, The Walking (Dead) Taco

Hey guys! I was in a bit of a writing rut today, and then life kind of collided with what I wanted to write about, and it ended up being really silly and kind of perfect, haha. If you’re like me, you love a good walking taco. Sadly, I feel like I left all of my walking taco dreams back at a concession stand at my high school’s football stadium. Yesterday, my husband and I were reminiscing about how great walking tacos were when I had an epiphany (I’m laughing at how serious this  sounds vs. how non-revolutionary it is):

We can so make walking tacos at home! 

So yeah, as of yesterday, our game plan for today was walking tacos and bonus, we get to forego the whole, is this Fritos bag melting, and do I now have third degree burns on  my hands thing.

As we started to prepare our tacos today, I was stressing over what to write about and had mostly settled on tagging some of my favorite Halloween makeup tutorials on Youtube, and trying to recreate one myself, which is so not fun in a writing format. Then, I jokingly said, what if I did a walking dead taco post and still did my zombie makeup? Wait. Not a joke. Cool idea! So here goes!

What you need:

  • 1lb of ground beef, or vegetarian beef crumbles 
  • 1 packet of taco seasoning
  • 1 bag of Fritos Scoops!
  • Shredded Mexican blend cheese, or dairy-free shreds
  • Your preferred toppings! We went with with Spanish style rice, mild chunky salsa, shredded lettuce, and taco sauce.

How to:

  • Brown your ground beef in a skillet on medium-high heat.
  • Once the meat is fully cooked, follow the mixing instructions on your taco seasoning and add to skillet.
  • Prepare your rice. We actually use a 90 second microwave rice that is so easy, but it’s also not great for you. Homemade is always better!

Once everything is ready, get to making your perfect Walking (Dead) Taco! I prepared mine in layers. First, a layer of Fritos, followed by meat, DF cheese, lettuce, salsa, another layer of Fritos, and finally topped off with taco sauce. My husband instead kept all of his Fritos on top to scoop up the taco fixings.

There you have it! This was a super simple meal that we both loved, and I look forward to adding this to our weekly dinner lineup. Oh, and the makeup was also super fun and didn’t require me to buy any new products, just use them in a way I wouldn’t typically. Thanks leighannsays for the awesome Zombie makeup tutorial!
